This is a carrot cake for people who want all the flavor of the tall bakery version without stacking layers. It is mixed by hand in two bowls, baked in a single 9 x 13-inch pan and finished with a thick, tangy cream cheese frosting. Oil keeps the crumb moist for days, brown sugar adds a hint of caramel, and plenty of finely grated carrot gives it its tender texture.

Why this recipe works

  • Oil, not butter. Oil stays liquid at room temperature, so the cake stays soft and moist even after a night in the fridge.
  • Finely grated carrots. Use the small holes of a box grater or a food processor's fine grating disc. Coarse shreds can stay crunchy and make the cake heavy.
  • Cool cake, cool frosting. Frosting a warm cake melts the frosting. Let the cake cool completely and keep the cream cheese cool but spreadable.

Making a layer cake

Divide the batter between two greased and lined 9-inch (23 cm) round pans and bake for 28 to 32 minutes. Double the frosting if you want to cover the sides as well as fill and top the cake.

Cream cheese frosting tips

Use full-fat block cream cheese, not the spreadable kind sold in tubs, which is softer and makes a runny frosting. Beat the butter first, then add the cream cheese and beat just until smooth. Overbeating cream cheese can make the frosting thin.

FAQ

Can I leave out the nuts?

Yes. Leave them out entirely or replace them with raisins or shredded coconut.

Can I make it ahead?

Carrot cake is even better the next day. Bake and frost it up to 2 days ahead and keep it covered in the fridge. For more cake ideas, see our chocolate layer cake.

Instructions

Make the cake

  1. Heat the oven to 350°F (180°C, or 160°C (320°F) fan, gas mark 4). Grease a 9 x 13-inch (23 x 33 cm) pan and line the bottom with parchment paper.

  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg.

  3. In a large bowl, whisk the eggs, oil, brown sugar, granulated sugar and vanilla until smooth, about 1 minute.

  4. Add the dry ingredients and stir with a spatula until just combined. Fold in the carrots and half the walnuts.

  5. Spread the batter in the pan and bake for 32 to 38 minutes, until the cake springs back when pressed and a skewer comes out clean.

  6. Cool completely in the pan on a wire rack, about 1½ hours.

Make the frosting

  1. Beat the butter with an electric mixer until smooth and creamy. Add the cream cheese and beat on medium speed just until smooth, about 30 seconds.

  2. Add the powdered sugar, vanilla and salt and beat on low, then on medium for 1 minute, until fluffy.

  3. Spread the frosting over the cooled cake and sprinkle with the remaining walnuts. Cut into squares to serve.

Notes

  • Toast the walnuts in a dry skillet over medium heat for 4 to 5 minutes, stirring, until fragrant.

Tips

  • Chill the frosted cake for 20 minutes before cutting for neat squares.

Substitutions

  • Spices: replace the cinnamon, ginger and nutmeg with 1 tablespoon pumpkin pie spice or mixed spice.
  • Pineapple: fold in ½ cup (120 g) drained crushed pineapple with the carrots for an even moister cake.

Storage and reheating

  • Because of the cream cheese frosting, store the cake covered in the fridge for up to 5 days. Let slices stand at room temperature for 20 minutes before serving.
  • Freeze unfrosted cake for up to 3 months.
